I have lived, worked, played and prayed in over 60 countries over the last 30 years and while Julia Roberts brilliantly portrayed the character Elizabeth Gilbert in Eat, Pray, Love, her story could have come straight out of my play book; chapter and verse. For me, the three countries that had the most profound influence on me, probably because I've spent a over a third of my entire life living there, are Greece, India and the UK, however, everywhere that I've lived/visited has in some way molded who I am and contributed to my rather expansive and enlightened view of the world.
I spent 21
years as an IT consultant for a cross-section of Fortune 500 companies, morphed into a documentary filmmaker telling stories about spiritual/cultural diversity then pursued entrepreneurial interest in the USA and abroad until one fine day my life was unexpectedly altered. I returned home after 10 years of living a carefree, adventurous life in London and India to become a full-time caregiver to my 80 year old mom after she suffered a stroke.
Fast forward two years, my mom
completely recovered, she is healthier today than she’s been in 40 years, her weight has transformed and her medical stats, which were historically off the
chart, are now completely within a healthy range.
As her caregiver, providing all of her meals, I helped produced those results by eliminating all processed foods from her diet and incorporating lots of local/seasonal produce, lean meats, fish and poultry, whole grains, quality oils, healing spices and herbs.
For my mom it was a piece of cake because all she had to do to comply with my food regime was to eat three amazingly delicious meals a day plus yummy snacks in between.
Along the way I was inspired to provide the same culinary TLC that transformed my mom’s health to other people because everyone deserves a loving, wholesome, delicious meal and everyone thrives when they eliminate highly processed food, food additives, junk food, frankenfood and the like from their diet and eat "real" good food instead.
